I suspect other intrusion (virus and bacteria) also triggers interferons.
However, the Pfizer vaccine has shifted the existing mRNA by erasing one letter in the mRNA sequence.
 
My understanding is:
Taking out the 
"U" (or any other letter) in the mRNA resamples crispr cas9 mechanism. When the whole DNA helix sequence is out of sync it will cause a methylation reaction. Missing one letter in the mRNA means it will no longer fit the original DNA and the double helix must shift, consequently, the system will malfunction.
